“Cyclospora is almost always associated with consumption of fresh vegetables, herbs, and a few fruits, particularly berries,” said Lee-Ann Jaykus, the William Neal Reynolds Distinguished Professor of Emerita in food, bioprocessing and nutrition sciences at NC State University. “Larger outbreaks are often linked to widely distributed multi-component foods, such as salad mixes or vegetable trays, making it difficult to determine which ingredient was contaminated.”
